I love the changes that you've made - I'll remember for the future to use wine with brown sugar if I don't have brandy. And it's good to know that Portobello mushrooms also work well in this stew; chanterelles are my favorite mushrooms by far, but they can be really hard to find and expensive, so it's good to have alternatives. By the way, I really love your blog - so many nice recipes, I'll have to come back and try some of them :-).
