Strawberry Balsamic Vinaigrette

The strawberries will never end.

The day after Meredith made the second strawberry pie, I had assumed the strawberries were gone. I should never assume.

There they were: two more containers of strawberries in the back of the fridge - and they were going to spoil if we didn't use them soon. I decided to puree the rest of them and find some uses for it. Some of the puree was mixed in with banana for Jeremy's desserts (and promptly frozen in ice cube trays).

The rest was turned into a salad dressing. I don't often eat fruity salad dressings, so one of the bottles made it to our neighbours, who have also benefited from the other spoils of the strawberry windfall.

And this is really, truly, the end of Strawberrypalooza. There ain't no more.

Strawberry Balsamic Vinaigrette

  • 3/4 cup olive oil
  • 6 tablespoons balsamic vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 teaspoon dried tarragon
  • 1 teaspoon honey
  1. Combine all ingredients in a blender or food processor.

  1. What a nice alternative to the usual raspberry vinaigrette.

  2. This looks delicious! I have a bounty of raspberries, and I'm sure my neighbors won't mind if I "borrow" some of theirs, especially if I share! I'm going to try this. Wish I had some strawberries! Thanks for linking up to Friday potluck.

  3. I wouldn't doubt that it works just as well with raspberries.

I would caution on the quantities unless you really, really like eating salad. We gave a considerable amount of the dressing away.

  4. :) Sounds like a great dressing and look forward to trying it!

  5. Sounds yummy and so smart to jar it.

  6. I will have to try this for sure.

  7. I actually adore fruity salad dressings, so I wish we lived a little closer to your neighborhood. I would have taken a bit off of your hands. Really, one can never have enough strawberries.

  8. What a GREAT recipe! Thanks for sharing it at Cast Party Wednesday. I hope you join me next week for another great party filled with amazing recipes!
