Strawberry Pie


Continuing Strawberrypalooza, Meredith was determined to duplicate one of my aunt's pies. This pie is basically whole strawberries set in a fairly solid jelly. My aunt only made it on special occasions and I was always excited when it landed on the dessert table.


Strawberry Pie
  • 1 cup sugar
  • 1 package raspberry Jell-O powder
  • 2 tbsp cornstarch
  • 1 cup water
  • 1 baked or packaged 9" pie shell, cooled
  • 5 cups strawberries, hulled
  1. Mix sugar, dry Jell-O powder and cornstarch in a medium saucepan and gradually stir in water.
  2. Bring to a boil on medium-high heat, stirring constantly for 2-3 minutes until thickened. Let cool for ten minutes.
  3. Fill pie shell with strawberries and cover with jelly glaze.
  4. Let refrigerate for at least three hours to set.

  1. I love fresh strawberry pie and it's one of my earliest food memories. My uncle Lud would wait with gusto each year for strawberry season. From that point until there were no more berries in the nearby fields, there would be fresh strawberry pie in the house.

  4. That strawberry pie looks delish, especially for this time of year.

    You asked for tips about grilling peaches on my blog, so I wanted to make sure you saw the answer, so I hope it's okay I'm replying here. Since your grill doesn't get very hot, make sure the peaches you are using are ripe.If they are not ripe, it will take longer for them to cook and the peach will get too mushy. Therefore a ripe peach is best, but the important thing is to have the brown sugar to melt to make the crunchy outside. You may just have to experiment to see it if works for you. If not, the peaches can be cooked the same way on the stove. Just add a little butter to the pan. Hope that helps a little bit!
